Newbie question about "auto" mapping and detection based on Visual &/Or IR data

Hey,

I'm considering a solution for an automated security monitoring system
The main idea:
1. Scheduled automated scan/mapping of area (say every 15 minutes)
2. Stitching and creating a single "state" of scanned area and exporting to some well known file format
3. Process the image checking for
3a. changes compared to previous images scanned
3b. Detect anomalies in changes (people, cars, etc).
3c. Send alert (picture and location on map) - if it is within parameters (in a polygon, based on hours for example).

Item 3 is some processing software, maybe AI/ML based model.

Thinking of for:
1. Autel Evo Max 4T + Nest + SkyCommand for controlling missions
2. Autel Mapping (or something better) - for the stitching into a single map (or 3 - one visual wide + one visual zoom + one IR) - any suggestions?
3. I have no experience in such, would appreciate any idea from the most naive to more advanced - I can't afford training a model, or developing this from scratch - I have a nice budget, but not that big to include custom programming...

BTW - I do have software development capabilities, just not enough resources for a full solution development (money & time).
