The white in the sky..how can I fix that in the videos and pictures? Or can I not due to the sun?

You can aim the gimbal down a little more so you have less sky, it will make the ground come in brighter,
or get a filter.

The obstacle avoidance helped me out and having my phone with bigger picture helped.

Even with the camera in Auto mode, you can tap the "sky" part of your screen and it will adjust the exposure to the area you tapped on the screen,.
