I can't double check right now as I'm out of town without the EVO, but I believe you actually tap twice: once to set the exposure, and then on the ensuing open lock icon to then lock it. I will try it on Friday when I return, but if someone wants to try it out, please report back to us.
Yes and no. You cannot control where the gimbal is pointing vertically, and you can't select a point of interest on the screen. However, you can tell the software where to point the drone by inputting the degrees ( as in a compass) on a per waypoint basis. I'm sure this function will be...

I actually shot it it on full auto but used my finger to tap and lock exposure the way I wanted it. I then edited the raw DNG file in photoshop.
